Momma's Spanish Rice


Growing up this dish was a staple at our house.  Moms favorite food I would say.  Her version of Spanish rice, a recipe taught to her from her mom & grandma.  
Growing up many different people had it & loved it with the exception of a few (the one little girl Sally that dumped it in the floor & hid it with her plate🤣).  Man was mom mad.  Over all though most everyone that's ever eaten it liked it. 
Now the rice above may look like my mom's Spanish rice,  only one thing is different...I used the instant pot (not the insta pot, the one we have isn't that name brand) but let me tell you...I LOVE IT!  It belongs to mom & dad, they only ever used it a few time because mom doesn't like it.  She says it makes the food taste weird.  It doesn't that is her just being resistant to change.  Since bringing it to my house (because my parents live with me) I have been using it every chance I get. 
Today I made her recipe in the instant pot & let me tell you it was fantastic.  Mom ate some and even gave it two thumbs up.
She said it tastes just like hers. 

I might be winning her over to the instant pot.  I just have to figure out more of her recipes to cook in it 😉

Wonderful waste of time

 I tried to warn you that I had so much to tell you...  My Vallie...gotta love those cheeks  It is hard for me to really pick just one thing to write about my girls, seems they are always up to something.  Cant believe today my first born turned 15.  I remember the day we brought her home from the hospital.  Stephen had seen Joe(he was on the fire dept. with stephen) at the store on the way home and stopped to show off his pretty baby girl.  I still didn't know him well, but he and Jackie came to the truck and ooo'd and ahhh'd over my sweet baby. then out of the blue, Jackie pulled her little foot out and said "Well look at that Joe, she has your toes!" (because they were very long little toes) they all laughed, I was slightly embarrassed but that comment has made it all these years as our little joke.  Now every time we see either Joe or Jackie, they ask how their girl is doing and if she still has Joes toes.  Seems just like yesterday she was that tiny little girl with all that hair.
